1 & 1⁄4 cups plain flour

2 tbsp demerara sugar 1 tbsp cornstarch 2 tsp baking powder Pinch of salt 1 & 1⁄4 cups water 2 tbsp sunflower oil


• Mix all ingredients.

• Add more water if the batter is too dry, but be careful not to over mix.

• Let the batter rest for 5 minutes. • Cook on a medium hot pan for about 2 minutes on each side.

• Top with your favorite vegan butter and syrup.
