Fun Holiday Doughnuts

INGREDIENTS
1 & 1⁄2 cups all-purpose flour
1⁄2 cup warm water 1 tsp yeast 2 tbsp sugar
A few drops of vanilla 3 tbsp oil 1⁄2 cup icing sugar
Some water
METHOD
Activate yeast by mixing with warm water and sugar. Let it sit for a few minutes.
In a large mixing bowl, combine yeast mixture, oil and vanilla. Whisk until smooth. Then gradually add the flour and stir well. Add more flour if needed until a soft dough is formed. Place the dough onto a floured surface and knead until fairly smooth.
Then place back into the bowl, cover with a clean towel and let rest for 1 hour or until doubled in size. Spread the dough on a floured surface and roll the dough out to 3⁄8-inch thickness.
Cut the dough using a doughnut cutter (or a mason jar lid for the outer edge and a pastry nozzle for the inner edge). Do not throw away the doughnut holes!
Put the doughnuts on a floured baking sheet, cover with a clean towel and let rest for 1 more hour.
Meanwhile, prepare the glaze by mixing icing sugar with some water.
When the doughnuts have risen, heat a pan with enough oil and fry them at 375C.
Cook them for about 30 seconds and flip until both sides are golden brown.
Remove carefully with chopsticks and let drain on the wire rack.
Glaze and let them cool before eating.
