Creamy Quinoa Porridge

INGREDIENTS
1⁄2 cup uncooked quinoa 11⁄2 cups canned coconut milk 2 tsp cinnamon 2 tsp maple syrup, or to taste
Splashes water, if needed Fruits of choice (I used banana and pomegranate) Coconut shavings, to sprinkle
Cacao nibs, to sprinkle
METHOD
In a saucepan, combine quinoa, coconut milk, maple syrup and cinnamon.
Bring to a boil, then reduce heat and simmer quinoa until cooked (approx. 12-15 minutes).
Add splashes more water if needed to reach desired porridge consistency.
Divide quinoa porridge between 2 bowls and top with fruits of choice.
Sprinkle with coconut shavings and cacao nibs.
