Fluffy Vegan Pancakes

INGREDIENTS
1¼ cups flour
1 tbsp baking powder
2 tsp apple cider vinegar
¾ cup + 1 tbsp plant-based milk
Vanilla extract
Optional: You can add sugar if you want, but usually I use agave syrup as my topping, so I don’t add sugar in the recipe.
METHOD
In a large bowl, pour all your dry ingredients and stir. Then, add your wet ingredients and mix until well combined. Heat a nonstick pan on medium and pour 1 tbsp of batter. Allow the pancake to cook until bubbles appear around the edges, then flip and cook until golden.
