Cashew-Stuffed Chocolate Covered Dates

INGREDIENTS

20 medjool dates, pitted 40 dry roasted, lightly salted cashews ̈7 oz vegan refined sugar-free chocolate (white, dark or half-half), melted

METHOD

  • Stuff each date with 2 cashews.

  • Pour the melted chocolate in a glass.

  • Put the stuffed date on a bamboo skewer and dip the date in the melted chocolate. Let excess chocolate drip off, then place the date on a plate covered with parchment paper and add toppings of choice. Repeat with remaining dates.

  • You can mix white and dark chocolate to create different patterns.

  • Let set in the fridge for about 30 minutes. Note: This is a very easy way to make dates look and taste fancy, a perfect holiday gift for your dear ones! Store in an airtight container in the fridge for 3-5 days (but not if you are using edible fresh flowers).
