Lemon Berry Mint Salad

1 lb fresh strawberries

6 oz fresh blueberries

½ vanilla bean pod (seeds only) or 1 tsp vanilla extract

1 tsp organic cane sugar

3 sprigs of fresh mint (cut in thin strips)

Zest of 1 lemon


• Wash berries and put in a medium bowl. Set aside. Cut vanilla bean in half, scrape out seeds, and then add to bowl with fruit. Toss until vanilla bean is well incorporated.

• Add mint, lemon zest and sugar to bowl. Stir until fruit is well coated with sugar. Let sit for approximately 5-10 minutes and serve.
