Dragon Fruit & Chia Seed Pudding Smoothie

INGREDIENTS

Chia Pudding

8 tbsp chia seeds

2 cups almond milk

1 tsp vanilla extract

2-3 tbsp maple syrup

½ tsp beet powder (optional)

Smoothie

8 oz coconut milk

1 banana (frozen)

1 cup dragon fruit (frozen)

½ cup coconut chunks (frozen)

METHOD

Chia Pudding

• Add all ingredients to a jar. Shake until well combined. Refrigerate overnight.

Smoothie

• Place all ingredients in a high speed blender. Blend until creamy. Place a layer of chia pudding in the bottom of a glass. Layer with smoothie and top with fresh fruit.
