As a holistic health practitioner, I am a huge advocate for fresh, wholesome foods that come from the earth. I also believe that food should be both healthy and delicious. In my first book, Zen and Tonic, my aim was to elevate the world of cocktails by swapping processed sugars and artificial flavors for elixirs infused with healthful fruits, veggies, herbs, botanicals and superfoods—making it fun and easy to truly drink to your health. With Vegan Cheese, I wanted to tackle a topic that involved a food that just might be the hardest for people to give up when embarking on a healthy lifestyle: cheese! I wanted to create a collection of recipes made with wholesome plant-based ingredients that would bring cheese indulgence to heightened levels. The 60 simple and delicious recipes in Vegan Cheese include hard, soft, creamy, sliceable, shreddable, meltable selections that will keep you coming back for more.
This simple and elegant fondue makes a terrific fare for intimate gatherings and romantic dinners alike. Serve with warm chunks of French bread or crisps, or an assortment of roasted, steamed or raw vegetables.
2 cups raw cashews
½ cup rejuvelac
¼ cup refined coconut oil, melted
2 tbsp nutritional yeast
2 tbsp chickpea miso
1 tsp sea salt
1 cup dry white wine
3 tbsp tapioca flour
2 tbsp water
Transfer the cheese ingredients into the blender. Process until smooth and creamy. Pour the wine into a saucepan, bring to a boil, add the cheese mixture and whisk to combine. Heat the mixture until very hot. Dissolve tapioca flour in water and stir into the mixture, whisking well. Cook until the mixture is thick, stretchy and shiny. Serve in a fondue dish.
