Kickstart Your Day

Whenever I feel a bit run down or sluggish, I like to drink a liter of water first thing in the morning with a tablespoon of apple cider vinegar, the juice of 1 lemon and a teaspoon of baobab powder. I find it really helps to speed up my metabolism, improve my digestion and make me start the day in the best way possible.

Eating To Feel Your Best

I personally think that when you are following a plant-based diet focused around unrefined whole foods, you automatically nourish yourself with every bite. I personally always try to include as many vegetables as I can in every meal as I truly believe they are the healthiest foods on the planet. They make me feel incredible day in and day out.

You Must Try Buckwheat

I have been loving buckwheat recently. Although it is normally used in savory dishes, when soaked overnight it’s great in smoothies and desserts too. I love making this super simple chocolate pudding by blending soaked buckwheat groats, dates, avocado and raw cacao powder. So decadent and rich and yet so healthy!

Strawberry and Pistachio Raw Chocolate Brownies

100 g ground almond

175 g pitted medjool dates (if you can’t find medjool dates, use regular dates soaked in warm water for at least 1 hour)

4 tbsp raw cacao powder

50 g chopped pistachios

30 g dried cranberries

80 g freeze-dried strawberries

50 g melted cacao butter

3 tbsp almond or cashew butter

METHOD

Place the pistachios and freeze-dried strawberries into the food processor and pulse for only a few seconds until they are roughly chopped, NOT finely ground. Remove them from the food processor and place into a mixing bowl. Leave it on one side. Place the pitted dates, almond butter, ground almond, cacao butter and raw cacao powder into the food processor and blitz until you have a sticky dough. Fold the chopped pistachios and strawberries into the sticky dough as best you can. I find it easier just to use my hands. Spread the sticky mixture into a brownie tin lined with baking paper. Press the mixture down with your fingers and try to spread it across the tin as evenly as you can. Place the tin in the fridge for at least 1 hour to help the brownies firm up. Cut into slices and enjoy!

I have been experimenting with lots of different breakfast ideas lately, and one of my favorites is to use steamed and frozen sweet potatoes and cauliflowers as a base in my smoothies instead of banana. I know it might sound a bit weird, but they create a lovely creamy texture. Plus, it’s a great way to add more vegetables into your diet.
