Fava Forever
I discovered fava on a recent trip to Santorini, Greece. It’s a puree made of yellow split peas flavored with onion and served with olive oil. Absolutely delicious!
Ingredients You Can't Get Enough Of?
Tahini and garlic!
Salty Peanut Butter Balls
¾ cup peanut butter
¹⁄³ cup rice malt syrup
¼ cup coconut oil, melted
¼ cup coconut flour
¼ cup almond meal
Salt for topping
Chocolate for coating, melted
METHOD
Combine all of the ingredients, except chocolate and salt, in a bowl. Allow the mix to set in the fridge/freezer for approximately 20 minutes. Roll the mix into 1-2 tbsp balls. If the mix starts to soften, put it back in the freezer for about 5 minutes, then roll again to create a smooth, round shape. Melt some vegan dark chocolate, coat the balls in the chocolate and sprinkle with sea salt. Store in the fridge.
Slow Roast Those Sprouts
Try slow roasting brussels sprouts with salt, pepper and olive oil. They caramelize when roasted for so long. I also like to top with fresh lemon zest when serving—perfect.
