Homemade Tomato Sauce

INGREDIENTS

3 tbsp extra virgin olive oil

1 yellow onion, diced (about 1 cup)

2 cloves garlic, finely minced

2 carrots, finely diced

2 celery sticks, finely diced

1 zucchini, finely diced

8 oz sliced mushrooms

2 tbsp freshly chopped basil

1 tbsp freshly chopped oregano

1 tbsp freshly chopped rosemary

1/2 tbsp freshly chopped thyme

2 bay leaves, remove later

4 cups chopped fresh tomatoes

½ cup dry red wine

1 26 oz container of chopped tomatoes

1 tbsp tomato paste

2 tsp sea salt

¾ tsp pepper

¾ tsp cinnamon powder

¹⁄8-¼ tsp red pepper flakes

2 tsp coconut sugar

Optional: 3 tbsp goji berries

METHOD

Add oil to pan over medium heat. Add onion and garlic and sauté, stirring occasionally, until softened. Add carrots, celery, and zucchini and cook for 5-7 minutes, stirring often. Add the rest of the ingredients and stir to combine. Cover and cook over medium low to low heat for 30-45 minutes. Taste and adjust spices if necessary. Serve over your favorite pasta or spiralized veggie noodles.

The Easiest Way to Improve Your Diet

Eat colorful food! (Naturally colored food, that is.) We always incorporate a wide range of seasonal, organic fruits, veggies and spices into our diet to ensure we’re getting all of the vitamins and minerals our bodies need!

How Has Nutrition Helped Heal You?

We’ve both suffered from a number of ailments related to food: migraines, skin rashes, and just about every stomach problem imaginable. When we finally switched to a plant-based, gluten-free diet, everything changed overnight! Changing our diet has made us healthier and happier, but it’s also led to some incredible opportunities, including sharing our recipes with our followers and inspiring others to cook more.

How Do You Nourish Yourself?

Nourishing our bodies does not just mean eating nutritious foods. There’s so much more to being healthy than simply what we eat, and each person’s definition of healthy is constantly changing. Nourishment means getting enough sleep, taking rest days, listening to your body, taking time to do something creative, traveling, reading more books, or whatever else makes you happy. Food is just one small part of the equation, and it’s so important to remember to do what’s best for you!

The Must Try Ingredient.

One word, one ingredient: gomasio. Haven’t heard of it? Gomasio is a dry condiment made from toasted sesame seeds, salt, and often other seasonings (think red pepper flakes, etc) that makes an incredible final touch on a number of savory dishes! We find ourselves putting it on everything from pasta, to rice, to salads. Give it a try!
