Vanilla Semolina Porridge

100 g spelt semolina grain

2 cups almond milk

1 cup water (or almond milk for an even creamier result)

1 tsp vanilla extract

1 tsp vanilla powder

Pinch of sea salt

1 tbsp vegan vanilla protein powder (optional)

Pinch of cinnamon


(fruit, nut butter, raw chocolate, cacao nibs)


In a small pot, bring almond milk and water to a boil. Once it begins to cook, carefully stir in semolina grain and keep stirring in order to prevent lumps. Turn heat to medium-low, add in salt and vanilla, and keep stirring until the porridge gets creamy and thicker. Turn off heat and stir in vanilla protein powder (if using) and a dash of cinnamon. Put the porridge into a bowl and add your desired toppings.

Try new ingredients you haven’t used before. It brings variety to your meals and most of the time it tastes gorgeous. As soon as a product gets in season, buy it, use it and store it in the freezer to have in the off-season.
