Vegan Apple Pie with a Twist

INGREDIENTS
1 sheet of puff pastry
2 Pink Lady apples, peeled and cubed
1¾ oz maple syrup
Pinch of cinnamon
5¼ oz coconut yogurt
10 fresh cherries
Pinch of cacao nibs
Pinch of chia seeds
METHOD
Cut out circle-shaped pieces of the puff pastry with a glass or a jar. Sprinkle them with some cinnamon. Bake for 20 minutes in an oven preheated to 355°F and then let cool. Cook the apples in a saucepan with 3½ oz water, 1¾ oz maple syrup and some cinnamon, on low heat, for about 8-10 minutes. Assemble and enjoy!
