Superfood Smoothie Bowl


3 ripe frozen bananas

1 cup frozen mixed berries

1 tbsp chia seeds

1 tbsp acai powder

1 cup coconut water

1 lime

Optional toppings: fresh fruit, dried fruit, nuts and seeds


Combine frozen bananas, frozen mixed berries, chia seeds, acai powder, the juice of one lime and coconut water into a high-speed blender. Serve with fresh fruit, nuts and seeds on top. Pictured above: topped with sliced banana, strawberries, pomegranate seeds, kiwi fruit and buckwheat groats.

Kitchen Tips:

1. I highly recommend trying out an air fryer. It’s a healthy alternative to a traditional fryer because it doesn’t require any oil! You can fry practically any vegetable, but I love to keep it simple and create homemade french fries with it.

2. I think beans and lentils are so underused in the kitchen. They’re a wonderful protein source for vegans, and they go great with rice and potatoes. I love baking garbanzo beans (sprinkled with cinnamon) in the oven for a sweet, crunchy, high-protein snack.

3. Lemon and lime! I add them to absolutely everything. I love squeezing an entire lime into smoothies or on top of rice for a tart burst of flavor. I’ve also found lemon to be a great low-sodium alternative to traditional salt.
